Whether we want to accept it or not; the summer weather is coming to an end. Soon we will be dressing in sweaters and drinking hot chocolate. This is actually my favorite time of the year! So in spirit of the cooler weather; I will be sharing with you this delicious vegetable soup recipe. What’s great about soups is you can literally put almost anything in them and it still tastes fantastic! I will be using plenty of different spices and herbs to bring this soup to life. The vegetables are there to bring texture and the noodles will make the dish more hearty!
Total time: approx. an hour
Servings: approx. 8-10
2 Bouillon cubes
1/2 a fennel sliced
1/2 a red onion sliced
2 large carrots diced
1 package of sliced mushrooms
1 sweet potato diced
2 cloves of garlic finely chopped
1/4 cup of cilantro
Large pot of water
1/3 of a cup of grated parmesan
1/4 of a jalapeno finely diced
1 tablespoon of dried basil
1 tablespoon of Italian seasoning
1 tablespoon of dried thyme
1 tablespoon garlic powder
1 tablespoon of citric acid
1 tablespoon cajun seasoning (you can use paprika or red pepper paste)
2 cups of vermicelli (orzo works well too)
2 tablespoons olive oil
Salt & Pepper to taste
Get a large pot of water starting to boil; add your bouillon cubes. Add the sweet potatoes, carrots, and fennel to the pot. These vegetables take longer to cook hence why they go in first. Throw in your diced jalapeno as well to give the water some flavor early on. Cook these for 15-20 minutes before adding the other vegetables. The carrots & potatoes should be almost cooked fully through.
Mix all your seasoning into the pot; the thyme, citric acid, garlic powder, basil along with the Cajun & Italian seasoning. Don’t forget your salt and pepper!
In a sautee pan on medium heat, pour your olive oil and add the garlic before mixing in your onions and mushrooms. Sprinkle some salt & pepper. Cook till onions are translucent. Then add to your pot mixture. At this point, you can also add your vermicelli or orzo as well as the parmesan.
Let the soup simmer for another 10-15 minutes till everything is tender. Taste to make sure no more seasoning is needed! I doubt it will be !
Garnish with cilantro for a special touch 🙂 Hope you all enjoy this comforting dish!
