Vegan Strawberry Banana Ice cream Sandwich

Hi, my lovely friends!

Several bloggers and I are collaborating to celebrate the beauty and versatility of strawberries. Who else loves this magnificent fruit? It’s so good, especially when in season. They are the perfect sweet treat.

Ever since changing my diet to eating dairy and gluten-free, it has been harder to enjoy certain foods that I have always loved. One of them being ice cream! If you had to ask me which dessert I can’t live without; it would be ice cream. Everything else is secondary but there is something so nostalgic to me when it comes to that frozen treat. I knew I had to come up with an ice cream recipe that I can make for myself and enjoy.

I noticed that most dairy-free desserts were using coconut milk so I decided that would be great for the milk substitute and it was! I hope you enjoy this recipe. It’s perfect as is or if you would like it in sandwich form. I will say that you get notes of banana and coconut in the ice cream; the banana was used to thicken the ice cream and strawberry and banana go really well together! Ingredients

Strawberry Ice cream

1/4 cup of honey (use agave if vegan) adjust sweetness as needed

2 1/4 cups of frozen fresh strawberries (about 16 strawberries)

2 frozen bananas

2 cups of full-fat coconut milk, room temp.

1 1/2 tsp vanilla flavor

A squeeze of fresh lemon juice (about 2 tbsp)

1/4 cup chopped fresh strawberries

1/2 tbsp cinnamon

Pinch of salt

Instructions

  • Blend all the ingredients for the strawberry ice cream together in a blender for 3-5 minutes till smooth.
  • Place the mixture into a container; I used my glass loaf pan. Mix in the chopped strawberries. Cover with lid or plastic wrap tightly and place in the freezer for at least 5 hours.

Banana Oat Cookie

2 ripe bananas

2 cup of instant oats (finely chopped GF oats)

1 tsp cinnamon

1 tsp honey (agave or maple syrup if vegan)

Instructions

  • Preheat oven to 350 degrees F.
  • Mash the bananas. Grind the gluten-free oats until they are fine just like instant oats. Mix the two together and add the cinnamon and honey to that as well.
  • Make the cookies into about 1-2 tbsp size then flatten lightly with your hand.
  • Bake for 10-15 minutes till bottom is golden brown. Allow cookie to cool.

 

How to construct the sandwich:

  • Take out the ice cream; allow it to soften for 15-30 minutes. Since it doesn’t have dairy; it takes a longer time to defrost.
  • Scoop some ice cream (about 2 scoops) into the cookie then stack the other cookie on top and press down gently. Using a spatula, smooth out the sides. Drizzle with some melted white chocolate.
  • Place ice cream sandwiches into a container with a lid and place back in the freezer for 1-2 hours.
