Spinach Kale Pesto

Who wouldn’t love a 5-minute recipe that can be used in so many ways? This fast and delicious green sauce has so many nutrients and flavor from just several simple ingredients. This particular spinach kale pesto is different than most because it doesn’t include parmesan cheese; therefore its vegan. You can definitely add cheese if you would like; about 1/2 cup parmesan. This sauce is perfect for pizza, pasta, sandwiches, marinade and so much more. I used it with my pasta & shrimp the other night and it tasted amazing! It’s a fantastic way to get greens into your daily diet; the kids would love it too 🙂

Ingredients

1 cup of fresh kale (no stems)

1 cup fresh spinach

2 garlic cloves

1 fresh lemon’s juice

1 tsp red pepper flakes

1 tsp Italian seasoning

Salt to taste

Pinch of Black pepper

1/2 cup olive oil

1/2 cup pine nuts

Instructions

  • Blend all together in a processor till smooth.
  • Serve with pasta, pizza, sandwiches, salads and whatever else your heart desires! This is the perfect accompaniment.
