Quinoa Salad with Lemon Honey Vinaigrette

I love quinoa and I love salads; so why not combine the two with a tasty vinaigrette? How many of you have heard of quinoa but never gave it a fair shot? Quinoa is an amazing wheat free alternative to starchy grains. Wheat free makes it gluten free as well which is another bonus! Lots of people assume that most things that are healthy doesn’t taste good but that is not true at all! For those who don’t know what quinoa tastes like; it has a subtle nutty flavor. Quinoa also picks up flavor very well which you will see once you make this dish! This quinoa salad will be refreshing, tangy, and full of textures! It couldn’t be any easier to put together as well; making it the perfect meal prep for the week.

Ingredients

1 cup quinoa

2 cups water

1/2 a peeled cucumber finely chopped

1/4 a red onion finely chopped

1 avocado diced

1 cup chopped spring mix or lettuce

1 tbsp dill

1 tbsp cilantro

Salt & Pepper to taste

Vinaigrette

1/2 a fresh lemon’s juice

1/4 cup olive oil

1 tbsp honey

1 tsp minced garlic

1/2 tsp balsamic

1 tsp mustard

Salt & Pepper to taste

Instructions

  • Cook the quinoa as instructed on its package. Allow to cool for 15 minutes.
  • In a bowl, add the chopped vegetables and a tbsp of dressing then add the quinoa. Spoon the rest of the dressing and gently mix all together.
  • Enjoy as a wonderful meal or side dish to a piece of fish like I did!
  • Store leftovers in an airtight container and place in fridge to eat later on.
