Homemade Chipotle Bowls

I haven’t met a person who isn’t the slightest obsessed with Chipotle. It’s one of those fast foods that you don’t feel too guilty about and just hits the spot every single time. Well, I don’t know about you but I rather save up and just start making it at home especially since its so easy and tastes just as delicious. Plus, homemade is always best. I even taped a video on youtube to show you guys how to make and assemble this dish! You guys have to make this! It is so good and makes for the perfect meal prep too.

Servings: 2-3 people

Total Time: approx. 30 min

Ingredients

Chicken Preparation

1 lb of diced boneless skinless chicken tenders or chicken breast

1 tbsp of Taco/Fajita seasoning

1 tbsp Garlic powder

1 tbsp Dried Oregano

1 tsp paprika

1/2 tsp cumin

1 tsp chili powder

1 tsp onion powder

Salt & Pepper to taste

2 tbsp olive oil

1/2 a lime’s juice

Guacamole Recipe

Sauce Preparation

1/3 cup Avocado Mayonnaise (you can use sour cream or greek yogurt)

1/2 tbsp paprika

1/2 a large Fresh lemon’s juice

Salt & Pepper to taste

Bell pepper Preparation

1 red bell pepper finely sliced

1 tbsp olive oil

Salt & Pepper to taste

Other components/options

Fresh corn kernels

Freshly diced iceberg lettuce

Brown Rice

Sauteed Onions

Black Beans

Instructions

  • Mix together all the seasonings in a small bowl for the chicken.
  • In a non-stick skillet, add the olive oil and set the stove to medium heat. Once the oil is warmed up, add the chicken to the pan.
  • Generously season the chicken on both sides. The more seasoning; the more flavor. Also, add the fresh lime juice at this point. *You most likely will have leftover seasoning.
  • Cook the chicken for about 6-8 minutes making sure to let it get a slight sear and check that it is fully cooked.
  • Set aside.
  • In the same pan, add a tbsp of olive oil and then add the sliced bell peppers. Cook on medium heat and season with salt and pepper. Get a sear on the bell peppers for extra taste. Cook 3 minutes on each side. Set aside.
  • In a bowl, mix together the mayo, paprika, fresh lemon juice, salt & pepper. Set the sauce aside.
  • Grab a bowl and layer brown rice, then the lettuce then chicken on one side, guacamole and peppers on the other. Corn in the center and sauce on most of the chicken. *To keep keto friendly, just don’t add brown rice. Do cauliflower rice and incorporate beans and onions for heartiness if you would like.
