My husband and I wanted to cut down on carbs and incorporate more vegetables into our daily diet; that’s where these Ground Turkey Zucchini Boats came into the picture. Zucchini has always been one of my favorites veggies which I have mentioned in previous posts. I was happy to find some in my fridge. Ground Turkey is also a great substitute for ground beef; its leaner and can develop great flavors just as well. I’ll be honest; I never tried Ground turkey till I was introduced to my husband’s family. I was hesitant to even try it at first but it did win me over! You will surely enjoy these Ground Turkey Zucchini Boats because they aren’t just healthy but also packed with flavor. By the way, it looks like a boat hence the play on the name for those of you who were wondering! 🙂

A jar of Enchilada sauce ( I made my own version by basically combining tomato pasta, water, citric acid, cumin, red pepper paste, garlic powder, Salt & Pepper)
3 tablespoons olive oil
1 avocado diced
1 handful of chopped cilantro
1 packet of taco seasoning
1 1b of ground turkey
1 tablespoon dried basil
1 cup of shredded mozzarella & cheddar cheese
2 tablespoons paprika
1 diced tomato
Salt & Pepper to taste
- First, cut the zucchinis in half and spread some olive oil on them and sprinkle the dried basil, paprika, and salt & pepper.
- Coat the bottom of a saute pan with olive oil and add the ground turkey to that pan; put on medium heat. To the ground turkey add the packet of taco seasoning along with Salt and pepper. Mix that all together and let it cook for 5-10 minutes till turkey is cooked through.
- Preheat the oven to 370 degrees F. Scoop the ground turkey mixture onto the seasoned zucchini’s; some people will hollow out the zucchini to let the mixture be scooped inside but I want to eat as much of the vegetable as possible so I leave it as is. Then spread your enchilada sauce on top of the zucchini and ground turkey. To finish it off, sprinkle the cheese on top and bake in the oven for 30-40 minutes covered with foil till zucchini is tender.
- Once out of the oven, add the diced cilantro, tomato, and avocado on top as a refreshing garnish to finish the dish off.
