Avocado Egg Salad

Need an easy breakfast idea? You must try this especially if you love all things eggs and avocados. The avocados adds the creaminess to this egg salad; you honestly don’t miss the mayo. Avocado is a much healthier and beneficial substitution. This is an awesome way to get in extra protein early in the morning as well. It’s delicious on its own and even more so stuffed in a sandwich!

Servings: approx. 4-5 people

Ingredients

2 pitted avocados

7 hard boiled eggs

1/4 cup chopped cilantro

1/4 cup chopped dill

3/4 of a lemon’s juice

1/2 tbsp mustard

1 tsp garlic powder

Salt & Pepper to taste

1 tbsp olive oil

Instructions

  • Mash the avocados. Place in a bowl. Add the chopped herbs to the bowl as well. Roughly chop the hard boil eggs and place in bowl. Season generously with salt and pepper. Add in the lemon’s juice as well as the garlic powder, mustard and olive oil. Stir together very well. Taste and adjust if need be by adding more salt and pepper or fresh lemon juice.

 

*To store: Cover it well in the fridge with plastic wrap. Use within two days.
